This is important. The Number One problem in home kitchens is dull knives. I don’t care how many copper core All-Clad pans, Le Creuset Dutch ovens or Benriner mandolins you have, cooking is going to be hard for you if your knife is dull. Again: the biggest handicap home cooks have is dull knives.
Believe it or not, I’ve always been terrible at sharpening knives. Yes, me, Mr. From Scratch—couldn’t sharpen a knife to save my life. So I found a terrific wet grind service downtown, and was happy to pay 3 to 5 bucks per knife twice a year. Expensive and a pain, but the knives were sharp as lightening. But what I recently learned was that I wasn't crappy, my stone was.
I found a fabulous, fabulous tool for sharpening knives. Honestly. I’m floored. The one for kitchen cutlery is called the DuoSharp and made by DMT in Marlborough, MA. It licenses an old patent that uses a polka dot pattern of nickel-coated steel dusted with microcrystalline diamond, specially made for this company in a uniform size. The even size and the interrupted pattern (the polka dots) make sharpening a breeze, six swipes on the fine side and six on the extra fine side, and your knife will slice through a limp sheet of paper or an over ripe tomato as if it were a straight razor.
All of cooking becomes a pleasure when your knives work. Sharp knives are safe knives—you don’t have to push it which causes it to slip off food and cut you; dull knives make ugly cuts, in food and on hands. Sharp knives are safe knives. Sharp knives make cooking easier. For me, this tool is a godsend.

Never could sharpen a knife correctly. This is perfect.
Yeah! Iworked in a kitchen, and all knives were dull, until I tried to cut carrots, the carrot rolled, and I cut my 4 fingers with a DULL knife. I don't have a problem with nice sharp knife! A dull knife is a hazzard in the kitchen, keep a 1st aid kit in the kitchen no matter, shar or not!
