Enjoy Dutch Goudas at different stages of maturity (8 oz. each): Red Wax Dutch Gouda, with a butterfat content of 48%, gouda hits the midpoint of creaminess in the spectrum of cheeses; Yellow Wax Dutch Gouda,a semi-soft cheese that has a creamy, yellow body with irregular holes and a natural yellow rind; Beemster Classic Extra Aged Gouda, matured for eighteen months, allowing its body to develop a muted caramel color, matched by an intense flavor with a sweet finish; Beemster X.O. Extra DOUBLE Aged Gouda, with this 26-month gouda, we first noticed its delicate, brittle texture, and after we tasted it, the flavor of butterscotch permeated the palate, followed by alternating waves of whiskey and pecan; and Extra TRIPLE Aged Gouda, a very special cheese, this gouda is aged for a full five years, and is both intense and complex.
