This leap of faith has landed them on solid ground. Their award winning Bergkaese is made from unpasteurized milk given by cows fed on Gunnison Basin hay and handfuls of corn. No supplements and no steroids find their way into this milk. This traditional German cheese is a wonderfully unique raw milk, washed rind cheese. Bergkaese starts out semi-soft and mild, but after a few months becomes semi-hard and assertive. This remarkable cheese has truffle-like, rustic, savory, and earthy flavors.
