A La Plancha is a classic way of serving seafood in Spain. By quickly searing the fish, you help to develop the flavor before the tuna is packed in olive oil and canned. Don Bocarte uses only bonito (tuna) from the Bay of Biscay. Bonito del Norte tuna is prepared using fresh, just caught fish, never frozen. Medium-to-large bonito tunas, just the right amount of salt,a meticulous cooking process; these are some of the characteristics that lead to a distinctive, juicy and delicate product. Enjoy this premium tuna with just a sprinkle of fleur de sel, and perhaps the faintest kiss of pepper.

Don Bocarte, located in the Spanish village of Santona, is famous for their artisanal canned seafood. It is here that they draw on their greatest natural resource, the Bay of Biscay. The bay is a wild and open sea exposed to heavy swell. Its waters are influenced by the Gulf Stream, varying the salinity and temperature at different times of year. With this variation, the characteristics of the fish and even the species caught varies. The bonito tuna is present only in mid-summer, making it a rare and special catch, before the fish migrates to other seas during the rest of the year.
