Dancing Fern by Sequatchie Cove Creamery

Sequatchie Cove Farm is located 35 miles outside of Chattanooga, Tennessee. The farm is a special place, surrounded by pristine Tennessee wilderness. Dancing Fern is their take on French Reblochon, and it is possible that the Tennessee version surpasses the quality of the original. About eight inches in diameter with a pink-orange rind, Dancing Fern is only available seasonally, from late spring until the end of summer or while supplies last.

Like true Reblochon, Dancing Fern is made from raw (unpasteurized) milk and aged about 60 days. Even with the two-month aging period, it displays none of the sharpness or firmness one might associate with an aged cheese. Also like Reblochon, the cheese oozes out from beneath its rind as soon as you cut into it, even before it reaches room temperature. Utterly complex, we note hints of fresh cut grass, mushroom, broccoli, and asparagus on the palate.
