Heirloom Bean Collection
The Heirloom Bean Collection includes: Anasazi Beans (12 oz), Anasazi beans (Phaseolus vulgaris) are small legumes related to the Kidney Bean that are about 1/2 inch long with a dappled burgundy and cream color; Black Calypso Beans (12 oz), the Calypso Bean (Phaseolus vulgaris) is a dramatic and beautiful bean. It is also called a Ying Yang bean because of the stark contrast of black and white that flows along the bean's length; Stueben Yellow Eye Beans (12 oz), the Yellow Eye Stueben Bean (Phaseolus Vulgaris) is related to the Kidney Bean. They are about 1/2 inch in length, oval shaped bean, ivory colored with a mustard colored splotch radiating from the inner seam; Borlotti Beans (Cranberry Beans) (12 oz), Borlotti beans (Phaseolus vulgaris) are traditionally used throughout Italy, but also in Portugal. In America, they are called Cranberry Beans and are used in pasta dishes and soups; and European Soldier Beans (12 oz), European Soldier beans (Phaseolus vulgaris) have a mild flavor and firm texture. They are also known as red eyes due to the splashes of color surrounding the hilum or "eye" of the bean which look like the silhouette of a soldier.
