The mill, located in the town of Pegalajar, in the province of Jaen, produces this exceptional extra virgin olive oil. Made from a blend of Spanish olives, this oil has an intense, mature flavor with a fruity, sweet aroma. The taste carries notes of green tomatoes, herbs, avocado, and freshly cut grass. A slight peppery bite finishes this oil, with a smooth, rounded finish. Run a thin drizzle of this Spanish oil over white fish, seared scallops, or squid.
