Organic Enzian - Entlebucher Schwingerkase
Entlebucher Schwingerkase, also known by the much shorter and less tongue-twisting name of Enzian, is one of our new office favorites here at igourmet.com. This cheese that is produced in the UNESCO Biosphere, the area in the Entlebuch valley where farming is completely organic. The cheese is named after Schwingen, the traditional sport of Swiss Wrestling, and the label shows two opponents wrestling each other in the ring of sawdust. Similar to Judo in that there are a number of throws and rolls (and thus the idea of "swinging" your opponent around), the sport is wonderfully unique and especially popular in the central part of Switzerland. The cheese that celebrates this sport is made from organic milk that comes from twelve farmers in the close vicinity. The shape of the cheese is reminiscent of Appenzeller, but Entlebucher Schwingerkase is aged for 5 to 6 months and the cheese changes quickly to piquant and sharp. The Schwingerkaese reveals lovely flavors of hay, flowers, and herbs on the palate, with a slightly pungent aroma. This is similar to Gruyere in that it's a dense cheese that melts beautifully and can even be used to perk up a fondue recipe. Enjoy Entlebucher Schwingerkase with a bone-dry Riesling or a silken Pinot Noir.
