Roland Turanicum (Triticum Turanicum)is an organic ancient grain imported from Italy. Similar in size, shape, texture and taste to farro, it is an excellent source of iron. Along with Italy and the surrounding Mediterranean, Turanicum is also popular in Middle Eastern countries, where it is called Khorasan. It is a versatile grain that can be paired with a wide variety of herbs, spices, vegetables and meats to create side dishes and salads. Due to the large size of this grain (larger than wheat or rye berries), it should be soaked overnight before cooking. To cook, soak Roland Turanicum in water for about 12 hours. Add to a pot of boiling water and cook, covered, for about 25-30 minutes. Drain and serve.

Please Note: Turanicum is like farro in that it is lower in gluten than traditional wheat, but still contains gluten and should not be confused with a gluten-free grain.
