Red Cloud Chevre by Haystack Mountain
Haystack was recently honored as one of 24 U.S. dairies invited to send cheese to the third "Feast of Cheeses" in Bra, Italy. The festival was sponsored by Slow Food International, an organization founded by Italian writer Carlo Petrini as an antidote to the industrialization of food production by fast-food outlets.
Red Cloud's seven ounce wheel has a smooth, reddish, soft washed-rind. Made with raw goat's milk at their farm, it is aged for 60 days to develop its powerful balanced and complex flavor. If you want your contribution to be the hit of the next wine and cheese party, bring Red Cloud along and serve with warm brandied cherries, roasted walnuts, any kind of citrusy chutney or Cerignola olives.
