These farm-produced goat cheese logs have a rather pronounced flavor, due to the fact that this chevre is aged. Unlike most other chevres which are soft, fresh and spreadable, this one is hard, crumbly and tangy. The French actually prefer this older type of goat cheese to the fresh goat cheese log to which Americans are accustomed. St. Maure is a farmhouse cheese with a gray, natural, edible rind and a slightly chalky texture. The flavor of this aged cheese has had time to develop and become more complex. Its most famous trait is the wooden stick that runs through its length, poking through the center of each end of the log. This stick helps the cheese form during its aging period.
