The Yellow Eye Stueben Bean (Phaseolus Vulgaris) is related to the Kidney Bean. They are about 1/2 inch in length, oval shaped bean, ivory colored with a mustard colored splotch radiating from the inner seam. The very center of the inner seam has a white center encircled by a light brown ring. Yellow Eye Stueben beans have a mild flavor, firm texture and the colors are retained after cooking. The Stueben Yellow Eyed beans have more of a mustard color than the Maine Yellow Eye beans. This bean is also referred as a Dot-Eye bean, Molasses-Face bean and Yellow-Eyed China bean. Yellow Eyes are commonly grown in Michigan, Idaho, and California. The mild flavor of this bean works well either when delicate dishes are desired, or the bean can be a vehicle for carrying just about any strong flavor. In Maine, this is a classic bean for baked beans. They are particularly good when cooked with Portobella or Black Trumpet mushrooms.
