Tongues of Fire beans (Phaseolus vulgaris) are related to Kidney Beans. These beans are deep umber, almost burgundy with lighter mocha colored markings which resemble fire flames. Color gently fades during soaking. These dried beans are originally from South America, but were brought to Italy, where they were used just like borlotti beans. Tongues of Fire are about 1/2 inch long. They have a fresh flavor and mild texture
Tongues of Fire have a mild flavor that absorbs other flavors well. Combine them with savory spices and aromatic herbs. Use in casseroles or dishes which highlight beans such as cassoulets, vegetable stews, soups and cold bean salads.
